The Origins of Harry’s Bar
The story of Harry’s Bar began with a legendary act of generosity. In 1928, a young American named Harry Pickering was staying in Venice and frequently visited the Hotel Europa, where Giuseppe Cipriani worked as a bartender. After facing financial difficulties, Pickering was forced to end his stay. Moved by his situation, Cipriani lent him 10,000 lire so he could continue his travels. Two years later, Pickering returned to Venice and repaid Cipriani with generous interest, encouraging him to open his own bar. On May 13, 1931, Harry’s Bar was born — named in honor of the man who made it possible.
Over time, the bar became a haven for artists, writers, and prominent personalities. Ernest Hemingway, one of its most loyal admirers, often spent hours there, drinking and finding inspiration. Other notable guests included Orson Welles, Peggy Guggenheim, Truman Capote, Charlie Chaplin, and even European royalty.
The Invention of the Bellini and Carpaccio
Harry’s Bar isn’t just legendary for its clientele — it’s also where two culinary classics were born:
- Bellini: Created in the 1940s, this iconic cocktail is made with prosecco and white peach purée, offering a refreshing, slightly sweet flavor. The name was inspired by the soft pink hues used by Renaissance painter Giovanni Bellini, whose work Cipriani admired.
- Carpaccio: In the 1950s, Cipriani crafted this dish for Countess Amalia Nani Mocenigo, who was following a diet that required raw meat. He served thinly sliced raw beef with a special sauce made from mayonnaise and mustard. He named the dish in honor of painter Vittore Carpaccio, known for his vibrant reds and whites.
